Preparation
- Roast scallops in enough butter (Truffle butter and cooked butter), depending on size 1-2 minutes per side, so that they are white but moist inside.
- At the same time toast the bread and mix the rocket salad with olive oil, salt and lemon juice.
- either serve bread and salad seperately or add scallops on top as shown in picture below.
- Garnish with fresh truffle and chopped parsley. Pour the butter left in the pan over the scallop toasts
- Finally sprinkle a bit of Aceto balsamico vinegar.
